Ingredients

Scale
  • 1 cup plum tomatoes, seeded and chopped
  • 1 cup packed fresh basil leaves, coarsely chopped
  • ¼ cup red wine vinegar
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 cup olive oil
  • Salt and pepper to taste

Instructions

  • Prepare Ingredients
    • Remove the seeds from the tomatoes to prevent excess wateriness.
    • Roughly chop the basil leaves and mince the garlic cloves.
  • Blend the Base
    • In a blender or food processor, combine the tomatoes, basil, garlic, Dijon mustard, red wine vinegar, and balsamic vinegar.
    • Blend until smooth.
  • Emulsify with Olive Oil
    • With the blender running on low speed, slowly drizzle in the olive oil to help the vinaigrette emulsify.
    • Blend until fully combined.
  • Season to Taste
    • Add salt and black pepper as needed.
    • Adjust the consistency by adding more olive oil or vinegar if desired.
  • Store and Serve
    • Transfer the vinaigrette to a glass jar or airtight container.
    • Refrigerate for up to a week, shaking well before use.

Notes

  • For a creamier texture, blend in ½ an avocado or 1 tablespoon of Greek yogurt.
  • For a spicy kick, add red pepper flakes or a dash of hot sauce.
  • To make it chunkier, simply whisk the ingredients instead of blending.
  • Use as a marinade for chicken, steak, or roasted vegetables.
