  • 20 ml olive oil
  • Dill, chopped
  • 70100g mozzarella cheese, shredded

Instructions

  • Prepare the Vegetables: Wash and slice the zucchini and eggplant. Chop the bell pepper, tomato, celery, and chives. Grate the carrot.
  • Sauté the Vegetables: Heat olive oil in a skillet over medium-high heat. Add the zucchini, eggplant, bell pepper, celery, and grated carrot. Sauté for 5 minutes, stirring occasionally.
  • Add Tomatoes and Chives: Stir in the chopped tomato and chives, cooking for another 2 minutes until softened.
  • Prepare the Egg Mixture: In a small bowl, whisk eggs, milk, salt, and pepper until well combined.
  • Combine and Cook: Pour the egg mixture over the sautéed vegetables. Sprinkle shredded mozzarella cheese on top. Cover and cook for 3-4 minutes until the eggs set and the cheese melts.
