Description
These festive St. Patrick’s Day sugar cookies are soft, buttery, and perfectly sweet with a hint of vanilla and almond. Dyed green and topped with sprinkles, they make a fun and delicious treat for celebrating the holiday!

- 2¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 cup unsalted butter, softened to room temperature
- 1½ cups granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract (optional)
- 3 tablespoons milk
- Green food coloring
- Green and white sprinkles or sanding sugar
Instructions
- Preheat the oven to 375°F (190°C). Line baking sheets with parchment paper or silicone baking mats.
- In a medium bowl, whisk together the flour, baking soda, and baking powder. Set aside.
- In a large bowl, using an electric mixer, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
- Beat in the egg, vanilla extract, and almond extract (if using) until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. If the dough is too stiff, add milk one tablespoon at a time until the desired consistency is reached.
- Add a few drops of green food coloring to the dough and mix until the color is evenly distributed. Adjust the amount of food coloring to achieve your desired shade of green.
- Using a tablespoon or a small cookie scoop, roll the dough into balls. Roll each ball in green and white sprinkles or sanding sugar to coat. Place the dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden. The centers may appear slightly undercooked, which is ideal for a soft texture.
- Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
