- Remaining seasoning mix
- Wet Batter:
- 1 cup buttermilk
- For Frying:

- 4 tbsp butter
- 2 cloves garlic, minced

- Butterfly the Lobster:
- Using kitchen shears, cut the lobster shell lengthwise, stopping near the tail fin.
- Gently pull the shell apart and lift the meat out, placing it on top of the shell.
- Season the Lobster:
- Mix paprika, Old Bay seasoning, and lemon pepper in a bowl.
- Sprinkle generously over the lobster meat.
- Prepare for Frying:
- In a separate bowl, mix flour, baking powder, and the remaining seasoning.
- Dip each lobster tail into buttermilk, letting it soak for a minute.
