- 20 large button mushrooms
- 8 oz (225 g) cream cheese, softened
- 1 cup fresh spinach, chopped
- ½ cup grated Parmesan cheese
- ¼ cup breadcrumbs
- 2 garlic cloves, minced
- 1 small onion, finely chopped
- 2 tbsp olive oil
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp red pepper flakes (optional)
- Fresh parsley for garnish

Prep the Mushrooms:
- Gently wipe the mushrooms clean with a damp cloth, avoiding rinsing to prevent sogginess.
- Remove the stems and finely chop them for the filling.

Sauté the Goodness:
- Heat 1 tbsp of olive oil in a skillet over medium heat.
- Add the chopped mushroom stems, onion, and garlic. Cook for about 5 minutes until soft and fragrant.
- Stir in the spinach and cook for another 2-3 minutes until wilted. Remove from heat and let cool slightly.

- In a bowl, combine cream cheese, sautéed mushroom mixture, Parmesan cheese, breadcrumbs, oregano, salt, black pepper, and red pepper flakes (if using).
- Stir until smooth and well combined.
