Description

These Creamy Spinach-Stuffed Mushroom Bites are a savory and irresistible appetizer, with a creamy, cheesy filling made from spinach, garlic, and Parmesan cheese. Baked to perfection with a golden crust, they make a delicious bite-sized treat that’s perfect for parties, gatherings, or as a light side dish.

Ingredients

Scale
  • 20 large button mushrooms
  • 8 oz (225 g) cream cheese, softened
  • 1 cup fresh spinach, chopped
  • ½ cup grated Parmesan cheese
  • ¼ cup breadcrumbs
  • 2 garlic cloves, minced
  • 1 small onion, finely chopped
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • Fresh parsley for garnish

Instructions

  1. Prep the Mushrooms:

    • Gently wipe the mushrooms clean with a damp cloth, avoiding rinsing to prevent sogginess.
    • Remove the stems and finely chop them for the filling.
  2. Sauté the Goodness:

    • Heat 1 tbsp of olive oil in a skillet over medium heat.
    • Add the chopped mushroom stems, onion, and garlic. Cook for about 5 minutes until soft and fragrant.
    • Stir in the spinach and cook for another 2-3 minutes until wilted. Remove from heat and let cool slightly.
  3. Mix the Filling:

    • In a bowl, combine cream cheese, sautéed mushroom mixture, Parmesan cheese, breadcrumbs, oregano, salt, black pepper, and red pepper flakes (if using).
    • Stir until smooth and well combined.
  4. Fill & Bake:

    • Preheat the oven to 375°F (190°C).
    • Spoon or pipe the filling into each mushroom cap, slightly mounding the mixture.
    • Arrange the stuffed mushrooms on a parchment-lined baking sheet and drizzle with the remaining 1 tbsp of olive oil.
    • Bake for 20-25 minutes until the mushrooms are tender and the tops are golden brown.
  5. Garnish & Serve:

    • Sprinkle freshly chopped parsley on top for a pop of color and freshness.
    • Serve warm and enjoy!

Notes

  • Make ahead: You can stuff the mushrooms a day in advance and bake them fresh when ready to serve.
  • Extra flavor boost: Try adding a splash of white wine while sautéing the mushroom stems for added depth of flavor.
  • Crunchy topping: Add toasted breadcrumbs or crushed nuts on top before baking for an extra crunch.
  • Soggy mushrooms: To avoid soggy mushrooms, clean them with a cloth instead of rinsing them under water.
