Description

Crispy on the outside, tender on the inside, these Crispy Smashed Fingerling Potatoes are the ultimate side dish or snack. Easy to prepare with simple ingredients, they’re a versatile and crowd-pleasing addition to any meal.

Ingredients

Scale
  • 1 pound yellow fingerling potatoes
  • 3 tablespoons sunflower oil
  • 1 teaspoon baking soda
  • 3 teaspoons salt (divided (for boiling and seasoning))
  • Black pepper (to taste)
  • 2 tablespoons chives or herbs of choice (chopped)

Instructions

  • Prepare the Potatoes: Rinse the fingerling potatoes and place them in a large pot. Add enough water to cover the potatoes by about an inch. Stir in 1 teaspoon of salt and 1 teaspoon of baking soda.
  • Boil the Potatoes: Bring the pot to a boil over high heat. Reduce heat to medium and simmer for 10–15 minutes, or until the potatoes are fork-tender.
  • Preheat the Oven: While the potatoes are boiling, preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Drain and Smash: Drain the potatoes and let them sit for a minute to release steam. Place them on the prepared baking sheet and gently smash each potato to about ½ inch thick using a fork, masher, or glass.
  • Season and Oil: Drizzle the smashed potatoes with sunflower oil and sprinkle with the remaining 2 teaspoons of salt and black pepper. Make sure each potato is evenly coated.
  • Roast for Crispy Perfection: Roast in the preheated oven for 25–30 minutes, flipping the baking sheet halfway through. Remove when the potatoes are golden and crispy on the edges.
  • Garnish and Serve: Top with freshly chopped chives or your favorite herbs. Serve immediately and enjoy the crispy goodness!

Notes

  • Why Baking Soda? It helps break down the potato skin, making it crispier when roasted.
  • Make Ahead: You can boil and smash the potatoes ahead of time. Store in the fridge, and roast when ready to serve.
  • Storage Tips: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in an oven or air fryer for the best results.
  • Variations: Experiment with different herbs like rosemary, thyme, or dill for added flavor.
