Instructions
- Prepare the Batter: In a large mixing bowl, whisk together the chickpea flour, water, cumin, cayenne pepper, paprika, garlic powder, salt, and black pepper. Mix until smooth and free of lumps.
- Add Vegetables: Fold in the chopped red onion, red bell pepper, corn, and parsley. Stir until all vegetables are evenly coated with the batter.
- Heat the Oil: Heat 1–2 tablespoons of vegetable oil in a large skillet over medium heat. Ensure the oil is hot before adding the fritters.
- Cook the Fritters: Scoop about ¼ cup of the batter for each fritter and gently place it in the skillet. Flatten slightly into a patty shape. Cook for 3–4 minutes on each side until golden brown and crispy. Transfer cooked fritters to a plate lined with paper towels to drain excess oil.
- Serve with Dip: Arrange the fritters on a serving plate and serve warm with vegan chipotle ranch dressing. Garnish with additional parsley, if desired.
