- 2 medium sweet potatoes (approx. 600g/21oz, peeled and boiled)
- ½ red bell pepper (finely chopped)
- ½ red onion (finely chopped)
- 3 large eggs
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cans of tuna (280g, drained)
- 1 small zucchini (grated and squeezed to remove excess moisture)
- 2 tablespoons fresh parsley (chopped)
- Spray oil (for frying)
Instructions
- Prepare the Sweet Potatoes: Peel and boil the sweet potatoes until soft (about 10–15 minutes). Once tender, drain them and mash in a large mixing bowl until smooth. Allow to cool slightly.
- Combine Ingredients: Add the chopped red pepper, onion, zucchini, parsley, and tuna to the mashed sweet potatoes. Mix well.
- Season and Bind: Crack in the eggs and sprinkle with salt and black pepper. Stir everything together until well-combined. The mixture should hold its shape when formed into patties. If it’s too wet, refrigerate for 20 minutes to firm up.
- Form Patties: Use your hands to shape the mixture into patties, roughly the size of your palm (makes about 10–12 patties).
- Cook the Patties: Heat a non-stick skillet over medium heat and lightly spray with oil. Cook the patties for 3–4 minutes per side, or until golden brown and crispy on the edges.
- Serve & Enjoy: Serve warm with a dollop of Greek yogurt, a side salad, or your favorite dipping sauce. These patties are also great for meal prep!
