Description
When you need a quick, flavorful, and nutritious plant-based dish, Sweet and Tangy Vegan Mustard-Glazed Tempeh Bites are the answer. These tender, golden-brown tempeh bites are coated in a zesty Dijon mustard and maple glaze with hints of garlic. They’re perfect as a main dish, snack, or topping for salads and bowls.
Ingredients
Scale
- 1 8-ounce block tempeh, cubed
- 3 tablespoons Dijon mustard
- 2 tablespoons white wine vinegar
- 2 tablespoons maple syrup or date syrup
- 2 cloves garlic (minced)
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
Instructions
- Prepare the Tempeh: Begin by cutting the tempeh into bite-sized cubes. To reduce any bitterness, you may steam the tempeh cubes for about 10 minutes, then drain and set aside.
- Mix the Marinade: In a bowl, whisk together the Dijon mustard, white wine vinegar, maple (or date) syrup, minced garlic, salt, and pepper until well combined.
- Marinate the Tempeh: Place the tempeh cubes in the bowl with the marinade, stirring to coat each piece thoroughly. Let the tempeh marinate for at least 15 minutes to absorb the flavors, or up to an hour for a more intense flavor.
- Cook the Tempeh: Heat a non-stick skillet over medium heat. Add the marinated tempeh to the skillet, including any remaining marinade, and cook for 8-10 minutes. Stir occasionally to ensure the tempeh browns on all sides and the marinade thickens into a glaze.
- Serve and Enjoy: Once golden brown and caramelized, remove the tempeh from the skillet and serve hot. Enjoy as a main dish with a side of roasted vegetables or add to salads, wraps, or grain bowls.
Notes
- Adjust Sweetness: Feel free to tweak the amount of maple syrup for a sweeter or less sweet glaze.
- Alternative Cooking Method: The tempeh can also be baked at 375°F (190°C) for 20–25 minutes, flipping halfway through.
- Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
