For the Filling:

  • 1 large egg
  • Salt, to taste
  • 1 tablespoon (15 g) sour cream
  • 45 medium potatoes, peeled and diced
  • Water (enough to boil potatoes)
  • 2 tablespoons (30 ml) olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 400 g (14 oz) minced meat (beef, chicken, or turkey)
  • 1 medium bell pepper, diced
  • 100 g (3.5 oz) frozen green peas
  • 1 medium tomato, diced
  • Black pepper, to taste
  • Chili pepper, to taste

For the Wraps:

  • 8 tortillas (12-15 cm in diameter)
  • ½ cup (120 ml) tomato sauce
  • 50 g (½ cup) mozzarella cheese, shredded
  • Vegetable oil, for frying

Instructions

  1. Boil the Potatoes: Bring a pot of water to a boil and add the diced potatoes. Cook until soft, about 10-12 minutes. Drain and mash lightly.
  2. Cook the Filling: Heat olive oil in a skillet over medium heat. Sauté the onion and garlic for 2-3 minutes until fragrant.
  3. Add the Meat: Stir in the minced meat, season with salt, black pepper, and chili pepper. Cook until browned, about 5-7 minutes.
  4. Mix in the Vegetables: Add the diced bell pepper, peas, and tomato. Cook for another 5 minutes, stirring occasionally.
  5. Combine the Filling: In a bowl, mix the cooked meat and veggies with the mashed potatoes, sour cream, and a beaten egg. Stir well.
  6. Assemble the Wraps: Spread 1-2 tablespoons of the filling onto each tortilla, roll them tightly, and secure the edges.
  7. Fry the Wraps: Heat vegetable oil in a pan over medium heat. Place the wraps seam-side down and fry until golden brown and crispy, about 2-3 minutes per side.
  8. Bake with Cheese: Transfer the wraps to a baking tray, spoon tomato sauce over each, and sprinkle with mozzarella cheese. Broil at 200°C (400°F) for 5 minutes until the cheese melts.
  9. Serve & Enjoy: Let cool for 2 minutes, then serve warm with sour cream, guacamole, or salsa.
