These bite-sized meatloaf cups are easy to make and great for meal prepping, family dinners, or party appetizers.

Ingredients

Scale

For the Meatloaf Bites:

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce

For the Filling & Topping:

  • 1/2 cup grated cheddar cheese
  • 1/4 cup fresh parsley, chopped (plus extra for garnish)
  • 1/2 cup ketchup
  • 1 tablespoon mustard

Instructions

1. Prepare the Meatloaf Mixture

  1. Preheat the oven to 375°F (190°C) and grease a mini muffin tin or baking sheet.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, chopped onion, garlic, salt, black pepper, and Worcestershire sauce.
  3. Mix until well combined, but avoid overmixing to keep the bites tender.

2. Shape and Fill the Meatloaf Bites

  1. Take a small portion of the meat mixture and roll it into a 1 ½-inch ball.
  2. Press your thumb into the center to create a small well and add a pinch of cheddar cheese.
  3. Close the meat around the cheese, forming a ball again.

3. Make the Topping

  1. In a small bowl, mix ketchup and mustard to create a simple glaze.

4. Bake the Meatloaf Bites

  1. Place the stuffed meatloaf bites in the mini muffin tin or on a baking sheet.
  2. Spoon a small amount of the ketchup-mustard glaze over each bite.
  3. Bake for 20-25 minutes, or until the meat is fully cooked and reaches an internal temperature of 160°F (71°C).

5. Serve and Garnish

  1. Let the meatloaf bites rest for 5 minutes before serving.
  2. Sprinkle with fresh parsley for extra flavor.
  3. Serve warm with extra dipping sauce or side dishes of your choice.

Notes

  • Use freshly grated cheese for a smoother melt.
  • Avoid overmixing the meat mixture to keep the bites tender and juicy.
  • Try different cheeses like mozzarella, gouda, or Swiss for variety.
  • Make them ahead of time and freeze for easy meal prep.
