Description

Soft, pink, and bursting with strawberry flavor, Strawberry Kiss Cookies are as delightful to make as they are to eat. Topped with a chocolate kiss and lightly dusted with powdered sugar, these cookies are perfect for parties, holidays, or as a sweet everyday indulgence.

Ingredients

  • Wet Ingredients:
    • Unsalted butter, 1 cup (softened)
    • Granulated sugar, 1 cup
    • Large egg, 1 (room temperature)
    • Vanilla extract, 1 teaspoon
    • Almond extract (optional), ½ teaspoon
  • Dry Ingredients:
    • All-purpose flour, 2 cups
    • Baking powder, 1 teaspoon
    • Salt, ¼ teaspoon
    • Strawberry gelatin mix, 1 (3 oz) package
  • For Finishing:
    • Powdered sugar, ¼ cup
    • Chocolate kiss candies, 24-30 (unwrapped)

Instructions

  1. Prepare the Dough:
    • In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
    • Add the egg, vanilla extract, and almond extract (if using). Mix until combined.
    • Gradually mix in the strawberry gelatin powder until fully incorporated, creating a vibrant pink dough.
  2. Combine the Dry Ingredients:
    • In a separate bowl, whisk together the flour, baking powder, and salt.
    • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a cohesive dough forms.
  3. Shape the Cookies:
    • Scoop about 1 tablespoon of dough and roll into smooth balls.
    • Place the dough balls on a parchment-lined baking sheet, spacing them 2 inches apart.
  4. Create Indentations:
    • Using your thumb or the back of a teaspoon, gently press the center of each ball to create a shallow indentation.
  5. Bake the Cookies:
    • Preheat the oven to 350°F (175°C).
    • Bake the cookies for 10-12 minutes, or until set but still slightly soft with faint cracks around the edges.
    • Let the cookies cool on the baking sheet for 2-3 minutes.
  6. Add the Chocolate Kisses:
    • While the cookies are still warm, gently press a chocolate kiss into the center of each cookie.
    • Transfer the cookies to a wire rack to cool completely, allowing the chocolate to set.
  7. Decorate:
    • Once cooled, lightly dust the cookies with powdered sugar for an elegant finish.

Notes

  • Use room-temperature ingredients for better consistency in the dough.
  • Chill the dough for 15 minutes if it feels too sticky to handle.
  • Avoid overbaking to keep the cookies soft and tender.
  • Work quickly to press the chocolate kisses into the warm cookies before they cool completely.
