Instructions
1. Sauté the Vegetables
- In a large pot or Dutch oven, melt butter over medium heat.
- Add chopped onion, carrots, and celery and cook for 5-7 minutes, until soft.
2. Add the Spring Vegetables
- Stir in asparagus, peas, and sliced radishes.
- Add fresh thyme and cook for another 3-4 minutes, stirring occasionally.
3. Add the Broth and Chicken
- Pour in the chicken broth and bring to a gentle boil.
- Reduce to a simmer and add shredded chicken.
- Season with salt and black pepper.
4. Prepare the Dumpling Batter
- In a medium bowl, whisk together flour, baking powder, and salt.
- Gradually stir in milk to form a thick batter.
5. Cook the Dumplings
- Drop spoonfuls of dumpling batter onto the surface of the simmering soup.
- Cover the pot and cook for 15-20 minutes, until dumplings are puffed and cooked through.
