  • 1 small yellow onion, chopped

  • 2 large eggs, beaten
  • 1 cup ricotta cheese (low-fat or full-fat)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 10 ounces frozen chopped spinach, defrosted and thoroughly drained
  • 1/4 teaspoon kosher salt

Instructions

  • Preheat & Prepare: Preheat your oven to 350°F (175°C). Grease a mini muffin pan with butter or non-stick spray.

  • Sauté the Onion & Garlic: In a skillet, melt butter over medium heat. Add the chopped onion and cook until soft and golden (5-7 minutes). Stir in garlic and cook for 1-2 more minutes until fragrant. Remove from heat and let cool.

  • Prepare the Spinach: If using frozen spinach, make sure it’s fully defrosted. Squeeze out as much excess water as possible using your hands or a dish towel.

  • Mix the Ingredients: In a large mixing bowl, combine beaten eggs, ricotta, mozzarella, and parmesan. Add the cooled onion and garlic mixture. Stir in the drained spinach and salt, mixing well until everything is evenly distributed.

  • Fill the Muffin Pan: Spoon the mixture into the mini muffin pan, filling each cup to the top.

  • Bake: Place the pan in the oven and bake for 20-25 minutes, or until the bites are golden brown around the edges and the centers are set.

  • Cool & Serve: Let the bites cool in the pan for a few minutes before carefully removing them. Serve warm or at room temperature, garnished with extra parmesan or fresh herbs.
