  • 1 medium onion, diced
  • 1 (10-ounce) package frozen chopped spinach, thawed and drained
  • 4 large eggs
  • 1 cup milk
  • 1 cup crumbled feta cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup shredded mozzarella cheese


Instructions

  1. Preheat the oven to 350°F. Grease a 9-inch pie dish with cooking spray or a little olive oil.
  2. In a skillet over medium heat, add the olive oil and diced onion. Sauté for about 5 minutes, or until the onion is translucent.
  3. Add the thawed and drained spinach to the skillet, stirring to combine, and cook for an additional 2-3 minutes. Remove from heat and let cool slightly.
  4. In a large mixing bowl, whisk together the eggs, milk, garlic powder, salt, black pepper, and nutmeg until well combined.
  5. Stir in the sautéed onion and spinach mixture, crumbled feta cheese, and shredded mozzarella cheese until evenly distributed.
  6. Pour the mixture into the prepared pie dish and spread it out evenly.
  7. Bake in the preheated oven for 35-40 minutes, or until the quiche is set in the center and lightly golden on top.
  8. Let the quiche cool for about 10 minutes before slicing and serving.
