A delicious and easy-to-make Spinach and Feta Quiche that is perfect for any meal.

- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 (10-ounce) package frozen chopped spinach, thawed and drained
- 4 large eggs
- 1 cup milk
- 1 cup crumbled feta cheese
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 350°F. Grease a 9-inch pie dish with cooking spray or a little olive oil.
- In a skillet over medium heat, add the olive oil and diced onion. Sauté for about 5 minutes, or until the onion is translucent.
- Add the thawed and drained spinach to the skillet, stirring to combine, and cook for an additional 2-3 minutes. Remove from heat and let cool slightly.
- In a large mixing bowl, whisk together the eggs, milk, garlic powder, salt, black pepper, and nutmeg until well combined.
- Stir in the sautéed onion and spinach mixture, crumbled feta cheese, and shredded mozzarella cheese until evenly distributed.
- Pour the mixture into the prepared pie dish and spread it out evenly.
- Bake in the preheated oven for 35-40 minutes, or until the quiche is set in the center and lightly golden on top.
- Let the quiche cool for about 10 minutes before slicing and serving.
Notes
- For a spicier version, add a pinch of red pepper flakes to the egg mixture.
- You can substitute the spinach with kale or Swiss chard for a different flavor profile.
- If you want a heartier quiche, add cooked bacon or sausage to the filling.
