  • 1 tbsp fresh grated ginger
  • 1 tbsp minced garlic
  • 1 tbsp neutral oil

Sauce Ingredients:

  • 1/4 cup low-sodium soy sauce (or tamari)
  • 2 tbsp chili garlic sauce
  • 1 tbsp sriracha (adjust to taste)
  • 1 tbsp honey, maple syrup, or brown sugar
  • 1 tbsp rice vinegar
  • 2 tsp toasted sesame oil
  • 1/2 tsp red pepper flakes

Instructions

  1. Cook the Ramen Noodles:
    • Bring a pot of water to a boil.
    • Add the ramen noodles and cook according to package instructions (usually 2-3 minutes).
    • Drain and set aside.
  2. Prepare the Sauce:
    • In a small bowl, whisk together soy sauce, chili garlic sauce, sriracha, honey (or maple syrup), rice vinegar, sesame oil, and red pepper flakes.
    • Set aside to let the flavors meld.
  3. Sauté Aromatics:
    • Heat 1 tbsp oil in a large pan or wok over medium heat.
    • Add chopped green onion, ginger, and garlic.
    • Sauté for about 1-2 minutes until fragrant.
  4. Combine Everything:
    • Add the cooked ramen noodles to the pan.
    • Pour in the sauce and toss everything together until well coated.
    • Cook for another 1-2 minutes to heat everything through.
  5. Garnish & Serve:
    • Top with extra green onions, sesame seeds, or a soft-boiled egg (if not vegan).
    • Serve immediately and enjoy!

Notes

  • Adjust the spice level by adding more sriracha or chili oil.
  • Add tofu, tempeh, or edamame for extra protein.
  • Stir in a spoonful of peanut butter or tahini for a creamy twist.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat in a pan with a splash of water to loosen the sauce.
  • To make crispy ramen, fry the cooked noodles in a little oil before adding the sauce.
