Ingredients
Scale
Toast and Masala Beans
- 2 slices of bread (white sourdough or your preferred type)
- 1 can (400g baked beans)
- 1 tablespoon ghee or butter
- ½ teaspoon cumin seeds
- 1 medium red onion (finely chopped)
- 1 green chili (thinly sliced)
- 1 teaspoon garam masala
- ¼ teaspoon turmeric
- 1 –2 teaspoons chopped fresh coriander (leaves and stalks)
Topping
- 75 g Cheddar cheese (grated)
- 75 g Red Leicester cheese (grated)
- ½ small red onion (finely chopped)
- 2 green or red chillies (sliced)
- 1 tablespoon fresh coriander leaves (chopped)
- 2 teaspoons hot sauce (e.g., Tabasco)
Instructions
- Prepare the Toast: Lightly toast the bread slices until golden and set aside.
- Cook the Masala Beans: In a pan, heat ghee over medium heat. Incorporate the cumin seeds and allow them to sizzle for a few moments until they release their aromatic fragrance. Add the chopped onion and green chili, sautéing until the onion becomes soft and golden. Sprinkle in the garam masala and turmeric, stirring well to coat the onions in spices. Add the baked beans, mixing thoroughly to incorporate the spices, and cook for 3–5 minutes until heated through. Stir in the chopped coriander for freshness.
- Assemble the Toasts: Spoon the masala beans generously over the toasted bread slices, spreading them evenly. Top each toast with grated Cheddar and Red Leicester cheese, ensuring an even layer across both toasts.
- Finish with Toppings: Add finely chopped red onion, fresh chili slices, and a sprinkle of coriander on top of the cheese. Drizzle with hot sauce to taste.
- Melt the Cheese: Position the toasts beneath a preheated grill or broiler for 2 to 3 minutes, or until the cheese is gooey and bubbling. Serve immediately.
