Southern Tomato Pie is a delicious summer dish featuring fresh tomatoes, cheese, and a flaky pie crust, perfect for warm weather gatherings.

- 2 cups fresh tomatoes, sliced (about 4 medium tomatoes)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon sugar
- 1 cup mayonnaise
- 1 cup shredded sharp cheddar cheese
- 1/2 cup crumbled cooked bacon (optional)
- 1/4 cup chopped fresh basil
- 1 pre-baked 9-inch pie crust
Instructions
- Preheat your oven to 350°F.
- In a colander, layer the sliced tomatoes and sprinkle with salt. Let them sit for about 30 minutes to drain excess moisture.
- After 30 minutes, pat the tomatoes dry with paper towels and place them in a mixing bowl. Add black pepper, sugar, and chopped basil. Stir gently to combine.
- In another bowl, mix the mayonnaise and shredded cheddar cheese until well combined. If using, fold in the crumbled bacon.
- Spread half of the tomato mixture evenly in the bottom of the pre-baked pie crust. Top with half of the mayonnaise and cheese mixture. Repeat the layers with the remaining tomatoes and mayonnaise mixture.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden and bubbly.
- Allow the pie to cool for about 10 minutes before slicing and serving.
Notes
- For a spicier kick, add diced jalapeños or a sprinkle of cayenne pepper to the tomato mixture.
- Substitute the cheddar cheese with mozzarella or a blend of Italian cheeses for a different flavor profile.
