Ingredients

  • 2 cups fresh tomatoes, sliced (about 4 medium tomatoes)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon sugar
  • 1 cup mayonnaise
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup crumbled cooked bacon (optional)
  • 1/4 cup chopped fresh basil
  • 1 pre-baked 9-inch pie crust


Instructions

  1. Preheat your oven to 350°F.
  2. In a colander, layer the sliced tomatoes and sprinkle with salt. Let them sit for about 30 minutes to drain excess moisture.
  3. After 30 minutes, pat the tomatoes dry with paper towels and place them in a mixing bowl. Add black pepper, sugar, and chopped basil. Stir gently to combine.
  4. In another bowl, mix the mayonnaise and shredded cheddar cheese until well combined. If using, fold in the crumbled bacon.
  5. Spread half of the tomato mixture evenly in the bottom of the pre-baked pie crust. Top with half of the mayonnaise and cheese mixture. Repeat the layers with the remaining tomatoes and mayonnaise mixture.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden and bubbly.
  7. Allow the pie to cool for about 10 minutes before slicing and serving.
