Ingredients

Scale
  • 1.5 pounds beef chuck roast, cut into bite-sized chunks
  • 4 cups beef broth
  • 2 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • ¼ cup soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • ½ teaspoon chili flakes (optional)
  • 2 carrots, julienned
  • 1 red bell pepper, sliced
  • 4 green onions, chopped (white and green parts separated)
  • 8 ounces ramen noodles (discard flavor packets)
  • Sesame seeds, for garnish
  • Fresh cilantro or parsley leaves, for garnish

Instructions

Step 1: Prepare the Slow Cooker

  • Place the bite-sized beef chunks into the slow cooker.
  • Add the minced garlic, grated ginger, soy sauce, oyster sauce, brown sugar, sesame oil, and chili flakes.
  • Pour in the beef broth, ensuring the beef is completely submerged.

Step 2: Slow Cook the Beef

  • Cover and cook on low for 7-8 hours or high for 4-5 hours, until the beef is fork-tender.

Step 3: Add the Vegetables

  • About 30 minutes before the cooking time ends, add the julienned carrots, sliced red bell pepper, and the white parts of the green onions.
  • Stir gently and allow the vegetables to soften.

Step 4: Cook the Ramen Noodles

  • In a separate pot, bring water to a boil and cook the ramen noodles according to the package instructions (about 3-4 minutes).
  • Drain and set aside.

Step 5: Combine and Serve

  • Add the cooked ramen noodles to the slow cooker and stir well.
  • Ladle the ramen into bowls and garnish with sesame seeds, the green parts of the green onions, and fresh cilantro or parsley.

Notes

  • For Extra Heat: Add sriracha, chili oil, or extra red pepper flakes.
  • For a Gluten-Free Version: Use tamari instead of soy sauce and gluten-free ramen noodles.
  • For a More Flavorful Broth: Let the beef marinate in the soy sauce and seasonings for 15 minutes before slow cooking.
  • Storage Tips: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on the stovetop.
