- 1 onion, finely chopped

- 1 leek, finely chopped
- 1 garlic clove, squeezed
- 4 ounces carrots, diced
- 2 stalks celery, diced
- 3 tablespoons all-purpose flour
- 2 cups vegetable broth
- 2 teaspoons dried thyme
- ½ cup dry white wine
- ¾ cup milk
- 1 pound canned tuna, drained
- Salt and black pepper, to taste
Mashed Potatoes:
- 2 pounds floury potatoes (King Edward, Russet, or Doré)
- 1 teaspoon salt
- ½ cup milk
- 4 ounces garlic butter
Topping:
- ⅔ cup grated cheese
- ⅓ cup panko breadcrumbs
- 1 teaspoon dried thyme
Instructions
- Prepare the Mashed Potatoes:
- Peel and chop the potatoes.
- Boil in salted water for 15–20 minutes until fork-tender.
- Drain and mash with milk and garlic butter until smooth.
- Sauté the Vegetables:
- Heat sunflower oil in a large skillet.
- Add onions, leeks, carrots, celery, and garlic. Sauté for 5–7 minutes until softened.
- Make the Tuna Filling:
- Sprinkle flour over the vegetables and stir.
- Gradually add vegetable broth while stirring.
- Pour in white wine and simmer for 3 minutes.
- Stir in milk, thyme, salt, and pepper.
- Add tuna, breaking it into chunks. Simmer for 5 minutes.
- Assemble the Shepherd’s Pie:
- Preheat oven to 375°F (190°C).
- Spread the tuna filling into a baking dish.
- Top with mashed potatoes, smoothing the surface.
- Add Topping & Bake:
- Sprinkle with cheese, breadcrumbs, and thyme.
- Bake for 25–30 minutes, until golden and bubbling.
- Serve & Enjoy!
- Let rest for 5 minutes before serving.

- Make it extra creamy by adding ½ cup heavy cream to the mashed potatoes.
