  • 4 ounces carrots, diced
  • 2 stalks celery, diced
  • 3 tablespoons all-purpose flour
  • 2 cups vegetable broth
  • 2 teaspoons dried thyme
  • ½ cup dry white wine
  • ¾ cup milk
  • 1 pound canned tuna, drained
  • Salt and black pepper, to taste

Mashed Potatoes:

  • 2 pounds floury potatoes (King Edward, Russet, or Doré)
  • 1 teaspoon salt
  • ½ cup milk
  • 4 ounces garlic butter

Topping:

  • ⅔ cup grated cheese
  • ⅓ cup panko breadcrumbs
  • 1 teaspoon dried thyme

Instructions

  • Prepare the Mashed Potatoes:
    • Peel and chop the potatoes.
    • Boil in salted water for 15–20 minutes until fork-tender.
    • Drain and mash with milk and garlic butter until smooth.
  • Sauté the Vegetables:
    • Heat sunflower oil in a large skillet.
    • Add onions, leeks, carrots, celery, and garlic. Sauté for 5–7 minutes until softened.
  • Make the Tuna Filling:
    • Sprinkle flour over the vegetables and stir.
    • Gradually add vegetable broth while stirring.
    • Pour in white wine and simmer for 3 minutes.
    • Stir in milk, thyme, salt, and pepper.
    • Add tuna, breaking it into chunks. Simmer for 5 minutes.
  • Assemble the Shepherd’s Pie:
    • Preheat oven to 375°F (190°C).
    • Spread the tuna filling into a baking dish.
    • Top with mashed potatoes, smoothing the surface.
  • Add Topping & Bake:
    • Sprinkle with cheese, breadcrumbs, and thyme.
    • Bake for 25–30 minutes, until golden and bubbling.
  • Serve & Enjoy!
    • Let rest for 5 minutes before serving.

  • Make it extra creamy by adding ½ cup heavy cream to the mashed potatoes.
