- One small yellow onion (chopped into small pieces (approximately one cup).)
- 3 cloves garlic (minced)
- 1 cup chopped tomatoes
- ¼ cup tomato puree
- ¾ teaspoon fine sea salt
Scrambled Eggs and Herbed Goat Cheese Toast
- 3 tablespoons soft goat cheese
- 2 teaspoons fresh dill (finely chopped)
- 2 teaspoons chives (finely chopped)
- Freshly cracked black pepper (to taste)
- 1 tablespoon + 1 teaspoon lemon juice
- 1 tablespoon extra virgin olive oil
- ¼ to ½ teaspoon honey (to taste)
- Fine sea salt (to taste)
- 4 large eggs
- 1 teaspoon butter
- 2 thick slices of bread (toasted (gluten-free if desired))
- 2 to 3 handfuls of fresh arugula
Instructions
Make the Tomato Sauce (Optional):
- In a small saucepan, warm the olive oil over medium heat.
- Introduce the diced onion and sauté for 3 to 4 minutes until it becomes tender.
- Incorporate the minced garlic and cook for an additional minute until it releases its aroma.
- Then, mix in the chopped tomatoes, tomato puree, and salt.
- Allow the mixture to simmer for 10 to 12 minutes, stirring occasionally, until the sauce thickens slightly. Remove from heat and set aside.
Prepare the Herbed Goat Cheese Spread:
- In a small bowl, mix the goat cheese with the dill, chives, lemon juice, olive oil, and honey.
- Season with salt and pepper to taste. Set aside.

- In a bowl, whisk the eggs with a pinch of salt until fully combined
- In a non-stick skillet, gently melt the butter over medium-low heat.
- Add the eggs and cook, stirring gently, until soft and creamy.
- Remove from heat just before the eggs are fully set to retain a soft texture.
Assemble the Toast:
- Spread a generous layer of the herbed goat cheese mixture on each slice of toasted bread.
- Top with scrambled eggs, followed by a handful of fresh arugula.
- Drizzle with additional honey or lemon juice if desired, and season with a pinch of sea salt and black pepper.
Serve with Tomato Sauce:
- Serve the toast with a spoonful of the optional tomato sauce on the side, or drizzle it lightly over the eggs for extra flavor.
Notes
- For a dairy-free version, use plant-based cheese and replace butter with olive oil.
- If you don’t have fresh herbs, you can substitute with dried herbs (use half the amount).
- To make this gluten-free, use gluten-free bread.
- Store the herbed goat cheese spread in an airtight container in the fridge for up to 3 days.
