  • 3 cloves garlic (minced)

  • ¾ teaspoon fine sea salt

Scrambled Eggs and Herbed Goat Cheese Toast

  • 3 tablespoons soft goat cheese
  • 2 teaspoons fresh dill (finely chopped)
  • 2 teaspoons chives (finely chopped)
  • Freshly cracked black pepper (to taste)
  • 1 tablespoon + 1 teaspoon lemon juice
  • 1 tablespoon extra virgin olive oil
  • ¼ to ½ teaspoon honey (to taste)
  • Fine sea salt (to taste)
  • 4 large eggs
  • 1 teaspoon butter
  • 2 thick slices of bread (toasted (gluten-free if desired))
  • 2 to 3 handfuls of fresh arugula

Instructions

Make the Tomato Sauce (Optional):

  1. In a small saucepan, warm the olive oil over medium heat.
  2. Introduce the diced onion and sauté for 3 to 4 minutes until it becomes tender.
  3. Incorporate the minced garlic and cook for an additional minute until it releases its aroma.
  4. Then, mix in the chopped tomatoes, tomato puree, and salt.
  5. Allow the mixture to simmer for 10 to 12 minutes, stirring occasionally, until the sauce thickens slightly. Remove from heat and set aside.

Prepare the Herbed Goat Cheese Spread:

  1. In a small bowl, mix the goat cheese with the dill, chives, lemon juice, olive oil, and honey.
  2. Season with salt and pepper to taste. Set aside.

  1. In a bowl, whisk the eggs with a pinch of salt until fully combined
  2. In a non-stick skillet, gently melt the butter over medium-low heat.

Serve with Tomato Sauce:
