Description

Savory Zucchini Tuna Patties are a simple, nutritious, and flavorful dish that makes a perfect light meal or snack. These crispy, protein-packed patties are made with zucchini, tuna, oats, and cheese, then served with a refreshing lemon yogurt sauce. Whether you’re looking for a quick lunch, a healthy appetizer, or an easy dinner, this recipe is a must-try.

Ingredients

Scale

For the Patties

  • ½ medium zucchini (about 100g), grated and liquid squeezed out
  • 1 can tuna, drained
  • 2 tablespoons oats
  • 2 tablespoons shredded cheese
  • 1 large egg
  • ¼ teaspoon garlic salt
  • ¼ teaspoon dill
  • ¼ teaspoon onion powder
  • Fresh ground pepper, to taste

For the Lemon Yogurt Sauce

  • 2 tablespoons Greek yogurt
  • 1 teaspoon lemon juice
  • ¼ teaspoon dill
  • ¼ teaspoon garlic salt

Instructions

  • Prepare the Zucchini – Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much liquid as possible to prevent soggy patties.

  • Mix the Patties – In a large bowl, combine the grated zucchini, drained tuna, oats, shredded cheese, egg, garlic salt, dill, onion powder, and fresh ground pepper. Stir until well mixed.

  • Form the Patties – Shape the mixture into small patties, about 2-3 inches in diameter, pressing them firmly to hold their shape.

  • Cook the Patties – Heat a non-stick skillet over medium heat and lightly grease it with oil. Place the patties in the skillet and cook for 3-4 minutes on each side until golden brown and fully cooked through.

  • Prepare the Lemon Yogurt Sauce – In a small bowl, mix together the Greek yogurt, lemon juice, dill, and garlic salt until smooth.

  • Serve – Serve the warm zucchini tuna patties with the lemon yogurt sauce on the side. Garnish with extra dill or lemon wedges if desired.

Notes

  • Make sure to squeeze out excess moisture from the zucchini to prevent the patties from falling apart.
  • Use any shredded cheese of your choice, such as cheddar or mozzarella, for added flavor.
  • Patties can be stored in an airtight container in the refrigerator for up to three days and reheated in a skillet or oven.
