  • 2 cups scallions, chopped
  • 4 tablespoons oil
  • 2 tablespoons soy sauce
  • ½ tablespoon dark soy sauce
  • ½ tablespoon oyster sauce
  • ½ teaspoon black pepper (adjust to taste)
  • 2 tablespoons cornstarch

Instructions

  • Prepare the Chicken – In a bowl, toss the chicken pieces with cornstarch until evenly coated.
  • Cook the Chicken – Heat 2 tablespoons of oil in a skillet or wok over medium-high heat. Add the chicken and cook for 6-8 minutes until golden brown and cooked through. Remove from the pan and set aside.
  • Sauté the Scallions – In the same pan, add the remaining 2 tablespoons of oil and toss in the chopped scallions. Stir-fry for 2-3 minutes until fragrant.
  • Make the Sauce – Add the soy sauce, dark soy sauce, oyster sauce, and black pepper to the skillet. Stir well.
  • Combine and Cook – Return the cooked chicken to the pan, tossing everything together for 2-3 minutes until the sauce thickens slightly.
  • Serve and Enjoy – Transfer to a serving dish and serve hot over steamed rice or noodles.
