- 1 cup red lentils, rinsed and drained
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon baking powder
- 1/2 cup water (adjust as needed)
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped bell pepper
- 1/4 cup chopped fresh cilantro
- 2 tablespoons oil (for cooking)
Instructions
- In a blender, combine the rinsed red lentils, turmeric powder, cumin powder, salt, black pepper, baking powder, and water. Blend until you achieve a smooth batter. If the batter is too thick, add a little more water to reach a pourable consistency.
- Transfer the batter to a mixing bowl and stir in the chopped onion, bell pepper, and cilantro. Let the batter rest for about 10-15 minutes.
- Heat a non-stick skillet or griddle over medium heat and add 1 tablespoon of oil.
- Once the oil is hot, pour about 1/4 cup of the batter onto the skillet, spreading it into a round shape. Cook for about 3-4 minutes, or until the edges start to lift and the bottom is golden brown.
- Flip the pancake and cook for an additional 2-3 minutes on the other side until golden and cooked through.
- Repeat with the remaining batter, adding more oil to the skillet as needed.
- Serve warm with yogurt or your favorite chutney.
Notes
- For added flavor, mix in spices such as chili powder or garam masala into the batter.
- You can substitute the vegetables with grated zucchini or spinach for a different taste and added nutrition.
