Savory Red Lentil Pancakes are delicious and easy to make, packed with flavor and nutrition.


Ingredients

  • 1 cup red lentils, rinsed and drained
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon baking powder
  • 1/2 cup water (adjust as needed)
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped bell pepper
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons oil (for cooking)


Instructions

  1. In a blender, combine the rinsed red lentils, turmeric powder, cumin powder, salt, black pepper, baking powder, and water. Blend until you achieve a smooth batter. If the batter is too thick, add a little more water to reach a pourable consistency.
  2. Transfer the batter to a mixing bowl and stir in the chopped onion, bell pepper, and cilantro. Let the batter rest for about 10-15 minutes.
  3. Heat a non-stick skillet or griddle over medium heat and add 1 tablespoon of oil.
  4. Once the oil is hot, pour about 1/4 cup of the batter onto the skillet, spreading it into a round shape. Cook for about 3-4 minutes, or until the edges start to lift and the bottom is golden brown.
  5. Flip the pancake and cook for an additional 2-3 minutes on the other side until golden and cooked through.
  6. Repeat with the remaining batter, adding more oil to the skillet as needed.
  7. Serve warm with yogurt or your favorite chutney.

Notes

  • For added flavor, mix in spices such as chili powder or garam masala into the batter.
  • You can substitute the vegetables with grated zucchini or spinach for a different taste and added nutrition.
