For the Stir-Fry:

  • 1 tablespoon vegetable oil, divided
  • 1 red bell pepper, cored, seeded, and cut into strips
  • 1 green bell pepper, cored, seeded, and cut into strips
  • 1 ¼ pounds flank steak, thinly sliced against the grain
  • 2 teaspoons minced garlic
  • 1 teaspoon minced ginger
  • Salt and black pepper to taste

For the Sauce:

  • ¼ cup soy sauce
  • 1 ½ tablespoons sugar
  • 1 ½ tablespoons cornstarch

Instructions

  • Prepare the Vegetables: Heat ½ tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the red and green bell peppers and cook for 3-4 minutes, stirring frequently, until they begin to soften. Transfer the peppers to a plate and set them aside.

  • Cook the Steak: In the same pan, add the remaining ½ tablespoon of oil. Add the thinly sliced flank steak in a single layer and cook for 2-3 minutes per side, or until browned and cooked to your preferred doneness. If necessary, cook in batches to avoid overcrowding.

  • Add Aromatics: Once the steak is cooked, return all the meat to the pan. Add the minced garlic and ginger and stir-fry for 1 minute until fragrant.

  • Make the Sauce: In a small bowl, whisk together soy sauce, sugar, and cornstarch until smooth.

  • Combine Ingredients: Return the bell peppers to the pan with the steak. Pour the soy sauce mixture over everything and stir to coat well. Cook for an additional 2-3 minutes until the sauce thickens and coats the meat and vegetables evenly.

  • Season and Serve: Taste and adjust with salt and pepper if needed. Serve immediately over steamed rice or noodles.

Notes

  • For extra tender beef, slice it thinly against the grain and marinate it for at least 15 minutes with a little soy sauce and cornstarch.
