Description

Korean Tuna Veggie Fritters combine canned tuna,fresh vegetables, and a light egg batter for a quick, savory snack or meal. Easy to prepare and incredibly delicious!


Ingredients

  • 1 tbsp vegetable oil (for frying)
  • 1 7 oz can tuna, drained
  • 1/4 medium onion (finely diced)
  • 1 green onion (chopped)
  • 30 g carrot (bell pepper, or other vegetables, diced)
  • 2 cloves garlic (minced)
  • 2 large eggs
  • 2 tbsp all-purpose flour
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper (or to taste)
  • 2 tbsp shredded cheddar cheese (optional, but highly recommended)
  • Ketchup or soy sauce (to serve, optional)

Instructions

  1. Prepare the Ingredients: Drain the tuna well and transfer it to a mixing bowl. Add the finely diced onion, green onion, diced vegetables, and minced garlic.
  2. Mix the Batter: Crack the eggs into the bowl and stir thoroughly. Add the flour, salt, and black pepper. Mix until the ingredients are well combined. If using cheddar cheese, fold it in for added richness.
  3. Heat the Pan: Heat the vegetable oil in a non-stick skillet over medium heat until hot but not smoking.
  4. Shape and Fry: Scoop about 2 tablespoons of the mixture and shape it into a patty. Place it gently in the hot skillet. Repeat with the remaining batter.
  5. Cook the Fritters: Fry each side for 3–4 minutes, or until golden brown and crispy. Adjust the heat as necessary to prevent burning.
  6. Serve and Enjoy: Transfer the cooked fritters to a plate lined with paper towels to remove excess oil. Serve warm with ketchup, soy sauce, or your favorite dipping sauce.

Notes

  • For a gluten-free version, substitute all-purpose flour with almond flour or a gluten-free blend.
  • Add a pinch of chili powder or diced chili for a spicy kick.
  • Store leftover fritters in an airtight container in the refrigerator for up to three days. Reheat in a skillet for the best texture.
  • These fritters freeze well! Layer them between sheets of parchment paper and freeze in a freezer-safe bag for up to three months.
