- 2 pounds salmon
- 3 tablespoons fresh dill, chopped
- Kosher salt and black pepper, to taste
- 4 to 5 garlic cloves, pressed or finely chopped
- 1 medium shallot, diced
- 1 tablespoon fresh thyme
- 2 tablespoons fresh dill
- 1 cup sweet peas
- 1 cup half-and-half
- ½ cup white wine
- ½ cup grated Parmesan cheese
- 1 teaspoon salt
- Freshly ground black pepper
- Olive oil, as needed
- ½ pound fettuccine or other pasta, cooked to al dente
Instructions
- Prepare the Salmon – Season the salmon with salt, black pepper, and 1 tablespoon of chopped dill.
- Sear the Salmon – Heat olive oil in a pan over medium heat. Cook the salmon skin-side down for 4-5 minutes until crispy. Flip and cook for another 3-4 minutes. Remove and set aside.
- Cook the Pasta – Bring salted water to a boil. Cook the fettuccine until al dente. Drain, reserving ½ cup of pasta water.
- Make the Alfredo Sauce – In the same pan, sauté the shallots and garlic in olive oil until fragrant. Pour in the white wine and let it reduce for 2 minutes.
- Add the Cream & Cheese – Stir in half-and-half and bring to a gentle simmer. Add Parmesan cheese and stir until melted and smooth.
- Combine Ingredients – Toss in the sweet peas, fresh thyme, and remaining dill. Add the cooked pasta and flaked salmon, mixing gently. Adjust consistency with pasta water if needed.
- Serve & Enjoy – Plate the pasta, garnish with extra Parmesan and fresh herbs, and serve immediately.

- For Extra Creaminess: Add a tablespoon of butter to the Alfredo sauce.
