  • 2 teaspoons Platinum Yeast from Red Star
  • 1 tablespoon granulated sugar
  • ¾ cup (180 ml) whole milk, warmed to 110°F (43°C)
  • 3 tablespoons (43 g) unsalted butter, softened
  • 1 large egg
  • 2⅓ cups (291 g) all-purpose flour, plus extra if needed
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 tablespoon finely chopped fresh rosemary (or 2 teaspoons dried)

For the Garlic Herb Butter:

  • 5 tablespoons (71 g) unsalted butter, extra soft
  • 1 tablespoon finely chopped fresh rosemary (or 2 teaspoons dried)
  • 1 tablespoon finely chopped fresh parsley (or 2 teaspoons dried)
  • 2 garlic cloves, minced (or ½ teaspoon garlic powder)
  • ¼ teaspoon salt

For Topping:

  • ¾ cup (95 g) shredded parmesan, mozzarella, or white cheddar cheese
  • 1 tablespoon (14 g) melted unsalted butter
  • Coarse or flaky sea salt for sprinkling

Instructions

  • Activate the Yeast: In a small bowl, whisk together the warm milk, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  • Make the Dough: In a large mixing bowl, combine flour, salt, garlic powder, and rosemary. Add the yeast mixture, butter, and egg. Mix until a dough forms, then knead for 8-10 minutes until smooth.
  • First Rise: Place the dough in a greased bowl, cover, and let rise for 1 hour, or until doubled in size.
  • Prepare the Garlic Herb Butter: In a small bowl, mix softened butter, garlic, rosemary, parsley, and salt.
  • Shape the Dough: Punch down the risen dough and divide it into small balls (about 1½ inches each). Roll each ball in garlic herb butter and arrange them in a greased 9-inch baking dish, layering with shredded cheese.
  • Second Rise: Cover and let the dough rise for another 30 minutes.
  • Bake the Bread: Preheat the oven to 375°F (190°C). Bake for 25-30 minutes, or until golden brown.
  • Finish & Serve: Brush with melted butter, sprinkle with flaky sea salt, and serve warm.
