Ingredients

Scale

Main Ingredients:

  • 1 medium cauliflower head
  • ½ cup butter, melted
  • 2 garlic cloves, minced
  • 1 cup Italian or plain breadcrumbs
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Optional Add-Ins for Extra Flavor:

  • ¼ teaspoon red pepper flakes (for spice)
  • 2 tablespoons chopped fresh parsley (for garnish)
  • ½ teaspoon lemon zest (for brightness)
  • ½ teaspoon smoked paprika (for depth)

Instructions

1. Prepare the Cauliflower

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  • Remove the outer leaves and core from the cauliflower.
  • Cut the cauliflower into bite-sized florets and place them in a large mixing bowl.

2. Make the Garlic Butter Coating

  • In a small saucepan or microwave-safe bowl, melt the butter.
  • Stir in the minced garlic to infuse the butter with flavor.

3. Prepare the Breadcrumb Coating

  • In a separate bowl, mix together the breadcrumbs, Parmesan cheese, salt, and black pepper until well combined.

4. Coat the Cauliflower

  • Pour the garlic butter over the cauliflower florets and toss until evenly coated.
  • Add the breadcrumb-Parmesan mixture and toss again until each floret is fully covered.

5. Roast the Cauliflower

  • Arrange the cauliflower florets in a single layer on the prepared baking sheet.
  • Bake in the preheated oven for 25-30 minutes, stirring halfway through to ensure even roasting.
  • The cauliflower is done when it’s golden brown and crispy.

6. Serve and Enjoy

  • Remove from the oven and transfer to a serving dish.
  • Garnish with fresh parsley and extra Parmesan, if desired.
  • Serve hot as a side dish, appetizer, or healthy snack!

Notes

  • For extra crispiness, broil for the last 2-3 minutes of roasting.
  • To make it gluten-free, use almond flour or gluten-free panko instead of breadcrumbs.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven or air fryer for best results.
