Ingredients
- 2 lbs baby potatoes (halved)
- 1/4 cup unsalted butter (melted)
- 6 cloves garlic (minced)
- 1/2 cup grated Parmesan cheese
- 2 tablespoons of finely chopped fresh parsley (or 1 tablespoon of dried)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder (optional)
- 1 teaspoon onion powder (optional)
Instructions
-
Preheat the Oven – Set your oven to 400°F (200°C). Line a baking sheet with parchment paper or grease it lightly.
-
Prepare the Potatoes – Wash and halve the baby potatoes for even cooking.
-
Make the Garlic Butter Mixture – In a small bowl, mix the melted butter, minced garlic, salt, black pepper, garlic powder, and onion powder (if using).
-
Coat the Potatoes – Place the potatoes in a large mixing bowl and toss them with the garlic butter mixture until well coated.
-
Add Parmesan & Arrange on the Baking Sheet – Sprinkle half of the grated Parmesan over the potatoes and toss again. Arrange them cut-side down on the prepared baking sheet for maximum crispiness.
-
Roast the Potatoes – Bake for 25–30 minutes or until the potatoes are golden brown and crispy on the edges.
-
Top with Cheese & Herbs – Remove from the oven and immediately sprinkle the remaining Parmesan cheese and fresh parsley over the hot potatoes.
-
Serve & Enjoy – Let them cool slightly before serving. Pair with grilled meats, seafood, or enjoy as a delicious snack!
Notes
- For extra crispiness, increase the oven temperature to 425°F (220°C).
- Swap baby potatoes for russet or Yukon gold potatoes, cut into bite-sized pieces.
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results.
- For a dairy-free option, replace butter with olive oil and omit Parmesan.
- Add a spicy kick by sprinkling red pepper flakes before roasting.
