Ingredients

Scale

For the Cauliflower Steaks:

  • 1 large head of cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste

For the Topping:

  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat the Oven:

    • Set your oven to 200°C (400°F).
    • Line a baking sheet with parchment paper or lightly grease it with oil.
  • Prepare the Cauliflower:

    • Remove the outer leaves and trim the stem, keeping the core intact.
    • Slice the cauliflower into 1-inch thick steaks (about 2-3 large slices).
  • Season the Cauliflower:

    • Place the cauliflower steaks on the prepared baking sheet.
    • Brush both sides with olive oil to help with crisping.
    • In a small bowl, mix garlic powder, paprika, salt, and black pepper, then sprinkle evenly on both sides of the steaks.
  • Roast the Cauliflower:

    • Place the baking sheet in the preheated oven and roast for 20-25 minutes, flipping halfway through.
    • The cauliflower should be golden brown and fork-tender.
  • Add the Cheese:

    • Remove from the oven and sprinkle shredded mozzarella cheese evenly over the cauliflower steaks.
    • Return to the oven and roast for another 5-7 minutes, or until the cheese is melted and bubbly.
  • Garnish and Serve:

    • Let the cauliflower steaks cool for a few minutes before transferring them to a serving platter.
    • Garnish with freshly chopped parsley and serve warm.

Notes

  • For extra crispiness, roast at a slightly higher temperature (220°C/425°F).
  • Make it spicy by adding red pepper flakes or cayenne pepper.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
