Description

Imagine a snack that’s not only delicious but also packed with nutrients and ready in minutes. These Pumpkin Pistachio Energy Balls are chewy, nutty, and infused with warm fall spices, making them the ultimate snack for any time of year. With natural sweetness from Medjool dates, a crunch from pistachios, and the comforting flavor of pumpkin, these no-bake bites are perfect for meal prep, quick energy boosts, or a healthy dessert.

Ingredients

Scale
  • ½ cup raw pistachios
  • ¼ cup raw cashews
  • 10 pitted Medjool dates
  • ¼ cup canned or homemade pumpkin purée
  • Pinch of sea salt
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • ½ teaspoon vanilla extract

Instructions

Step 1: Prepare the Nuts

  • Add the raw pistachios and raw cashews to a food processor.
  • Pulse until the nuts are finely ground but still have some texture (avoid turning them into nut butter).

Step 2: Add the Dates and Pumpkin

  • Add the pitted Medjool dates to the food processor and pulse until they’re finely chopped and mixed with the nuts.
  • Add the pumpkin purée, sea salt, pumpkin pie spice, cinnamon, and vanilla extract to the mixture.

Step 3: Combine the Mixture

  • Process everything together until the mixture forms a sticky dough. Scrape down the sides of the food processor as needed to ensure even mixing.

Step 4: Roll into Balls

  • Scoop out the mixture using a tablespoon or small cookie scoop.
  • Roll each portion between your palms to form small, bite-sized balls.

Step 5: Chill and Serve

  • Place the energy balls in an airtight container or on a plate lined with parchment paper.
  • Refrigerate for at least 30 minutes to allow them to firm up.
  • Once chilled, serve and enjoy!

Notes

  • Storage: Store the energy balls in the refrigerator for up to one week, or freeze them for up to three months.
  • Customizations: Feel free to add mix-ins like mini chocolate chips, shredded coconut, or chia seeds for extra texture and flavor.
  • Pumpkin Purée: If using homemade purée, make sure it’s thick and not watery to avoid a sticky mixture.
  • Soft Dates: If your dates are too dry, soak them in warm water for 10 minutes and drain them before adding to the recipe.
