  • Author: Raven
  • Total Time: 25 minutes
  • Yield: 2-3 servings 1x

Description

A crispy, delicious, and nutrient-packed breakfast that keeps you full and helps burn belly fat. These potato and egg fritters are rich in fiber, protein, and healthy fats—making them an excellent choice for weight loss and sustained energy.

Ingredients

Scale
  • 23 medium potatoes, peeled and grated
  • 1 small onion, finely chopped
  • Olive oil, for sautéing and frying
  • 2 tablespoons green onion, finely chopped
  • 2 tablespoons fresh dill, chopped
  • 50g-60g grated cheese
  • 2 eggs
  • Salt, to taste

Instructions

  • Prepare the Potatoes: Grate the potatoes and squeeze out excess moisture using a kitchen towel or cheesecloth.
  • Sauté the Onion: Heat a small amount of olive oil in a skillet, add the finely chopped onion, and cook until translucent (about 5 minutes). Set aside.
  • Mix the Ingredients: In a large bowl, combine the grated potatoes, sautéed onion, green onion, dill, cheese, eggs, and salt. Mix thoroughly.
  • Shape the Fritters: Form small portions of the mixture into patties.
  • Cook the Fritters: Heat olive oil in a non-stick skillet over medium heat. Place the fritters in the skillet and fry for 3-4 minutes per side until golden brown.
  • Serve and Enjoy: Transfer to a paper towel-lined plate to drain excess oil. Serve warm.

Notes

  • For extra crispiness, remove as much moisture from the potatoes as possible.
  • To make it healthier, bake at 375°F (190°C) for 20-25 minutes, flipping halfway.
  • Add spices like garlic powder or paprika for extra flavor.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
