This Poor Man’s Husband Casserole is a creamy, cheesy, and satisfying meal that’s made with simple, affordable ingredients. Perfect for busy weeknights, potlucks, or family dinners, this comfort food classic is easy to make and packed with flavor.

Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup sour cream
  • 1 cup grated cheddar cheese
  • 8 oz wide egg noodles
  • Salt and pepper, to taste

Instructions

  • Preheat the Oven
    • Set your oven to 350°F (175°C).
  • Cook the Noodles
    • Bring a large pot of salted water to a boil.
    • Add the egg noodles and cook until just al dente (about 6-7 minutes).
    • Drain and set aside.
  • Brown the Ground Beef
    • In a large skillet over medium heat, cook the ground beef and chopped onion.
    • Stir occasionally until the beef is fully browned and the onion is soft.
    • Drain excess grease and season with salt and pepper.
  • Mix the Sauce
    • In a large bowl, combine cream of mushroom soup, sour cream, and cooked beef mixture.
    • Stir until well combined.
  • Assemble the Casserole
    • In a greased 9×13-inch baking dish, layer half of the cooked noodles.
    • Spread half of the beef mixture over the noodles.
    • Repeat with the remaining noodles and beef mixture.
  • Top with Cheese and Bake
    • Sprinkle the grated cheddar cheese evenly on top.
    • Cover with foil and bake for 25 minutes.
    • Remove foil and bake for another 10 minutes, until the cheese is golden and bubbly.
  • Let It Rest & Serve
    • Let the casserole rest for 5 minutes before serving.
    • Enjoy with garlic bread, a fresh salad, or steamed vegetables.

Notes

  • For extra crunch, add crushed Ritz crackers or panko breadcrumbs on top.
  • For a healthier version, use Greek yogurt instead of sour cream.
  • Make it ahead: Assemble the casserole and refrigerate up to 24 hours before baking.
  • Storage: Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
