Ingredients

Scale
  • For the Sauce:

    • 3 tablespoons soy sauce
    • 1 tablespoon sesame oil
    • ½ teaspoon ginger powder
    • ¼ teaspoon white pepper
  • For the Fried Rice:

    • 2 tablespoons olive oil
    • 2 cloves garlic, minced
    • 1 onion, diced
    • 2 carrots, peeled and grated
    • ½ cup frozen corn
    • ½ cup frozen peas
    • 3 cups cooked brown rice (preferably day-old rice)
    • 2 cups diced pineapple (fresh or canned, drained)
    • ½ cup diced ham
    • 2 green onions, sliced

Instructions

  • Prepare the Sauce: In a small bowl, whisk together soy sauce, sesame oil, ginger powder, and white pepper. Set aside.
  • Sauté the Aromatics: Heat olive oil in a large skillet or wok over medium-high heat. Add garlic and onion, cooking for 2-3 minutes until fragrant.
  • Cook the Vegetables: Stir in grated carrots, frozen corn, and peas, cooking for 3-4 minutes until softened.
  • Add Rice and Pineapple: Add cooked brown rice, diced pineapple, and ham, stirring to mix everything evenly. Cook for 3-4 more minutes until the rice is heated through.
  • Pour in the Sauce: Add the prepared sauce to the skillet, stirring well to coat all the ingredients. Cook for another 2-3 minutes until everything is evenly flavored.
  • Garnish and Serve: Stir in sliced green onions, remove from heat, and serve hot.

Notes

  • For extra crunch, top with chopped cashews or sesame seeds.
  • To make it vegetarian, replace ham with tofu or extra veggies.
  • For best results, use day-old rice to prevent it from getting mushy.
