  • 2 tablespoons vegetable oil
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, julienned
  • 1 green bell pepper, julienned
  • 2 cloves garlic, minced
  • 2 eggs, lightly beaten
  • 100g bean sprouts
  • 2 spring onions, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon hoisin sauce (optional)
  • 1 teaspoon sesame oil
  • Salt and black pepper, to taste

Instructions

1. Cook the Noodles

  • Boil water in a large pot and cook the noodles according to the package instructions until al dente.
  • Drain and set them aside.

2. Heat the Oil

  • In a large wok or skillet, heat 2 tablespoons of vegetable oil over medium-high heat.

3. Sauté the Vegetables

  • Add the sliced onion, red bell pepper, and green bell pepper to the wok.
  • Stir-fry for 2-3 minutes until the vegetables begin to soften.
  • Stir in the minced garlic and cook for another minute until fragrant.

4. Scramble the Eggs

  • Push the vegetables to one side of the wok.
  • Pour the beaten eggs into the empty space and scramble them until fully cooked.
  • Mix the scrambled eggs with the sautéed vegetables.

5. Add the Noodles

  • Add the cooked noodles to the wok.
  • Toss them with the eggs and vegetables until well combined.

6. Incorporate the Sauces

  • Pour the soy sauce, oyster sauce (if using), hoisin sauce (if using), and sesame oil over the noodles.
  • Toss everything together to coat the noodles evenly in the flavorful sauces.

7. Add Bean Sprouts and Spring Onions

  • Stir in the bean sprouts and chopped spring onions.
  • Cook for another 2-3 minutes until the bean sprouts are tender but still crisp.

8. Season and Serve

  • Add salt and black pepper to taste.
  • Serve immediately, garnished with extra spring onions or sesame seeds if desired.

Notes

  • Noodles: Use any noodles you have on hand, including egg noodles, rice noodles, or even spaghetti. Adjust the cooking time accordingly.
  • Vegetarian Option: Omit the oyster sauce and add tofu or more vegetables like broccoli, mushrooms, or zucchini.
  • Gluten-Free: Use gluten-free noodles and substitute tamari for soy sauce to make this dish gluten-free.
  • Protein Add-Ons: Add grilled chicken, shrimp, beef strips, or crispy tofu to make the dish heartier.
  • Spice It Up: For extra heat, sprinkle some red chili flakes or drizzle Sriracha on top before serving.
