Description

These Pecan Cookie Balls are buttery, nutty, and melt in your mouth with every bite. Made with just a few simple ingredients, they are perfect for holiday gatherings, cookie exchanges, or a cozy afternoon treat. Roll them in powdered sugar for a classic snowy finish or enjoy them plain for a rich, buttery flavor.

Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 cup (2 sticks) butter, softened
  • ½ cup granulated sugar
  • 1 cup chopped pecans
  • 1 tbsp vanilla extract
  • 1 cup powdered sugar (for rolling, optional)

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream butter and sugar together until light and fluffy.
  • Stir in vanilla extract and chopped pecans until evenly mixed.
  • Gradually add flour, mixing until a soft dough forms. If the dough is too crumbly, knead it gently with your hands.
  • Scoop 1 tablespoon of dough, roll it into a ball, and place it on the prepared baking sheet.
  • Bake for 12-15 minutes, or until the bottoms are lightly golden. Do not overbake.
  • Let cookies cool slightly, then roll in powdered sugar while still warm. Roll them again once completely cooled for extra sweetness.
  • Serve and enjoy!

Notes

  • For extra crunch, toast the pecans before adding them to the dough.
  • Double coat with powdered sugar for a sweeter, snow-like effect.
  • Storage: Keep in an airtight container at room temperature for up to 1 week.
  • Freezing: Store baked cookies in a freezer-safe container for up to 3 months. Thaw at room temperature before serving.
