Ingredients
Scale
- 3 cups all-purpose flour
- 1 cup (2 sticks) butter, softened
- ½ cup granulated sugar
- 1 cup chopped pecans
- 1 tbsp vanilla extract
- 1 cup powdered sugar (for rolling, optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream butter and sugar together until light and fluffy.
- Stir in vanilla extract and chopped pecans until evenly mixed.
- Gradually add flour, mixing until a soft dough forms. If the dough is too crumbly, knead it gently with your hands.
- Scoop 1 tablespoon of dough, roll it into a ball, and place it on the prepared baking sheet.
- Bake for 12-15 minutes, or until the bottoms are lightly golden. Do not overbake.
- Let cookies cool slightly, then roll in powdered sugar while still warm. Roll them again once completely cooled for extra sweetness.
- Serve and enjoy!
Notes
- For extra crunch, toast the pecans before adding them to the dough.
- Double coat with powdered sugar for a sweeter, snow-like effect.
