- 1 cup diced fresh peaches (about 2 medium peaches)
- 1/2 cup white chocolate chips
Instructions
- Preheat your oven to 350°F. Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and oats.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Gently fold in the diced peaches and white chocolate chips.
- Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a chewier cookie, add an extra tablespoon of butter.
- You can substitute the peaches with other fruits like diced strawberries or blueberries for a different flavor.
