Ingredients
- 4 tablespoons butter or margarine
- 1 medium head garlic, minced
- 2 cups baby potatoes, washed and scrubbed
- 2 cups champignon mushrooms (fresh or canned)
- 1 sprig fresh rosemary (or ½ teaspoon dried)
- 1 tablespoon fresh basil, chopped (or ½ teaspoon dried)
- 3 tablespoons soy sauce
- Salt and pepper, to taste

Prepare the Potatoes – If the baby potatoes are large, cut them in half for even cooking. Bring a pot of salted water to a boil and cook the potatoes for 8–10 minutes until fork-tender. Drain and set aside.

Sauté the Garlic – Melt butter or margarine in a large skillet over medium heat. Add minced garlic and sauté for 1–2 minutes, stirring frequently until fragrant. Avoid burning.

Roast the Mushrooms and Potatoes – Add the cooked potatoes and mushrooms to the skillet. Stir to coat them in the garlicky butter. Pour in soy sauce and continue cooking for 8–10 minutes, stirring occasionally, until the potatoes develop a crispy golden-brown exterior and the mushrooms soften.

Add Herbs & Seasoning – Sprinkle rosemary and basil over the dish. Stir well to combine. Season with salt and black pepper to taste. Let it cook for another 2–3 minutes to enhance the flavors.
