These oven-baked zucchini fritters are a crispy, cheesy, and healthy alternative to traditional fried fritters. Made with grated zucchini, Parmesan cheese, and fresh herbs, they’re baked to golden perfection while remaining light, nutritious, and flavorful.

Ingredients

Scale
  • 2 small zucchini, grated
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon basil
  • 2 eggs
  • 1 cup panko bread crumbs or regular/gluten-free breadcrumbs
  • ¼ cup Parmesan cheese, grated
  • Salt and black pepper, to taste
  • Spray coconut oil or other cooking spray

Optional Additions:

  • Red pepper flakes for spice
  • Mozzarella or feta cheese for extra creaminess
  • Fresh parsley or thyme for additional flavor

Instructions

  • Preheat the Oven

    • Preheat your oven to 400°F (200°C).
    • Line a baking sheet with parchment paper and lightly spray with cooking spray.
  • Prepare the Zucchini

    • Grate the zucchini and place it in a clean kitchen towel.
    • Squeeze out as much liquid as possible to ensure the fritters stay crispy.
  • Mix the Ingredients

    • In a large mixing bowl, combine:
      • Grated zucchini
      • Chopped onion
      • Minced garlic
      • Basil, eggs, breadcrumbs, Parmesan, salt, and pepper
    • Mix until everything is evenly combined.
  • Shape the Fritters

    • Scoop 2 tablespoons of the mixture and form into small patties.
    • Place the patties on the prepared baking sheet, spacing them evenly.
  • Bake Until Golden and Crispy

    • Lightly spray the tops of the fritters with cooking spray.
    • Bake for 20-25 minutes, flipping halfway through, until they turn golden brown and crisp.
  • Serve and Enjoy

    • Let the fritters cool slightly before serving.
    • Serve warm with your favorite dipping sauce!
