- 1/2 cup honey
- 2 large eggs
- 1/2 cup buttermilk
- 1 tablespoon orange zest
- 1/4 cup fresh orange juice
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 12-cup muffin tin or line with paper liners.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, ginger, and cinnamon. Set aside.
- In a large bowl, cream the softened butter and sugar together until light and fluffy, about 3-4 minutes.
- Add the honey, eggs, buttermilk, orange zest, orange juice, and vanilla extract to the butter mixture. Mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a spicier kick, add 1/4 teaspoon of cayenne pepper to the dry ingredients.
- For a citrus twist, substitute lemon juice and zest for the orange.
