- 1 medium yellow onion (chopped)
- 2 garlic cloves (minced)
- 1 medium carrot (grated)
- 1 pound of mild Italian sausage (with the casings taken off)
- 2.5 cups uncooked penne pasta
- 2 cups crushed tomatoes
- 1.5 cups chicken or vegetable stock
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1 cup shredded Pepper Jack cheese
- Chopped basil for garnish
Instructions
- Cook the aromatics: In a spacious pot, warm the olive oil over medium heat. Stir in the diced onion and cook for about 3-4 minutes until it becomes tender. Add the minced garlic and grated carrot, cooking for an additional 2 minutes until fragrant.
- Cook the sausage: Add the mild Italian sausage to the pot, breaking it up into smaller pieces as it cooks.
- Add the pasta and liquids: Stir in the uncooked penne pasta, crushed tomatoes, chicken or vegetable stock, salt, and pepper. Cover the pot and cook for 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
- Add the cheese: Once the pasta is cooked, stir in the shredded cheddar and Pepper Jack cheeses. Continue to cook for 2-3 minutes, stirring until the cheese is fully melted and the dish is creamy and smooth.
- Garnish and serve: Remove the pot from heat and garnish with freshly chopped basil.
