- 1 cup long-grain white rice (or brown rice)
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn (canned or frozen)
- 1 medium onion, diced
- 1 bell pepper (red or green), diced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- Salt & black pepper to taste
- Juice of 1 lime
- Fresh cilantro, chopped (for garnish)

Instructions
- Cook the Chicken:
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
- Season chicken with cumin, chili powder, garlic powder, salt, and black pepper.
- Cook for 5-7 minutes per side until golden brown and fully cooked.
- Remove from skillet and set aside.
- Sauté the Vegetables:
- Add the remaining 1 tablespoon of olive oil to the skillet.
- Toss in onions and bell peppers, cooking for 3-4 minutes until softened.
- Add the Rice, Beans, and Corn:
- Stir in rice, black beans, and corn.
- Pour in 2 cups of water or chicken broth to cook the rice.
- Bring to a boil, then reduce heat to low and cover.
- Simmer Until Rice is Cooked:
- Let the mixture simmer for 15-20 minutes, stirring occasionally, until rice is tender.
- Slice the Chicken & Mix Everything Together:
- Slice or dice cooked chicken into bite-sized pieces.
- Add the chicken back to the pan and mix well.
- Finish with Lime & Cilantro:
- Squeeze fresh lime juice over the burrito bowl.
- Garnish with chopped cilantro for extra flavor.
