  • 1 cup long-grain white rice (or brown rice)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (canned or frozen)
  • 1 medium onion, diced
  • 1 bell pepper (red or green), diced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt & black pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)

  • Shredded cheese
  • Sour cream
  • Jalapeños

Instructions

  1. Cook the Chicken:
    • Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
    • Season chicken with cumin, chili powder, garlic powder, salt, and black pepper.
    • Cook for 5-7 minutes per side until golden brown and fully cooked.
    • Remove from skillet and set aside.
  2. Sauté the Vegetables:
    • Add the remaining 1 tablespoon of olive oil to the skillet.
    • Toss in onions and bell peppers, cooking for 3-4 minutes until softened.
  3. Add the Rice, Beans, and Corn:
    • Stir in rice, black beans, and corn.
    • Pour in 2 cups of water or chicken broth to cook the rice.
    • Bring to a boil, then reduce heat to low and cover.
  4. Simmer Until Rice is Cooked:
    • Let the mixture simmer for 15-20 minutes, stirring occasionally, until rice is tender.
  5. Slice the Chicken & Mix Everything Together:
    • Slice or dice cooked chicken into bite-sized pieces.
    • Add the chicken back to the pan and mix well.
  6. Finish with Lime & Cilantro:
    • Squeeze fresh lime juice over the burrito bowl.
    • Garnish with chopped cilantro for extra flavor.
  7. Serve and Enjoy!
    • Spoon into bowls and add your favorite toppings.
