No-Bake Coconut Pecan Praline Cookies are a delicious and easy treat that requires no baking. They combine the rich flavors of coconut, pecans, and chocolate for a delightful dessert.

- 2 cups shredded unsweetened coconut
- 1 cup chopped pecans
- 1 cup rolled oats
- 1 cup brown sugar, packed
- 1/2 cup unsweetened cocoa powder
- 1/2 cup unsalted butter
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a large mixing bowl, combine the shredded coconut, chopped pecans, and rolled oats. Set aside.
- In a medium saucepan, combine the brown sugar, cocoa powder, unsalted butter, milk, and salt. Cook over medium heat, stirring constantly until the mixture comes to a gentle boil. Allow it to boil for 1 minute without stirring.
- Remove the saucepan from heat and stir in the vanilla extract.
- Pour the hot mixture over the coconut, pecans, and oats in the mixing bowl. Stir until everything is well combined and evenly coated.
- Using a spoon or cookie scoop, drop spoonfuls of the mixture onto a parchment-lined baking sheet. Flatten them slightly with the back of the spoon.
- Refrigerate the cookies for at least 30 minutes to set.
Notes
- For a chocolate twist, add 1/2 cup of mini chocolate chips to the mixture before dropping onto the baking sheet.
- Substitute walnuts or almonds for pecans for a different nutty flavor.
