Description

A rich and velvety mushroom soup bursting with earthy flavors and creamy indulgence. Perfect for chilly evenings, cozy lunches, or as a sophisticated starter, this easy-to-make recipe is a comforting delight.

Ingredients

Scale
  • 2 tbsp unsalted butter
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 400g (14 oz) white mushrooms, diced
  • 200g (7 oz) cremini or Swiss brown mushrooms, diced
  • 3 1/4 cups vegetable stock
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 3/4 cup crème fraiche or heavy cream

Optional Garnishes

  • Croutons
  • Drizzle of cream or olive oil
  • Fresh parsley, thyme, or chervil
  • Bread (for serving)

Instructions

  1. Prep Your Ingredients:
    • Chop the onion and mince the garlic.
    • Dice the mushrooms into small pieces.
  2. Sauté Aromatics:
    • Melt the butter in a large pot over medium-high heat.
    • Add the onion and garlic, cooking for about 3 minutes until softened but not browned.
  3. Cook the Mushrooms:
    • Add the diced mushrooms to the pot and sauté for 10 minutes, stirring occasionally. Allow them to release their moisture and develop flavor.
  4. Simmer the Soup:
    • Pour in the vegetable stock and season with salt and black pepper.
    • Bring the soup to a boil, then reduce the heat to medium and let it simmer uncovered for 15 minutes.
  5. Add Creaminess:
    • Stir in the crème fraiche or heavy cream and simmer for an additional 5 minutes.
  6. Blend the Soup:
    • Carefully transfer the soup to a blender in small batches and blend until smooth.
    • If your blender allows, leave the lid slightly ajar to let steam escape.
  7. Finish and Serve:
    • Return the blended soup to the pot and simmer for 1-2 minutes to eliminate any bubbles.
    • Serve hot in bowls, garnished with a drizzle of cream or olive oil, fresh herbs, and croutons if desired. Pair with crusty bread for a complete meal.

Notes

  • Mushroom Variety: A mix of white and cremini mushrooms adds depth to the flavor. Wild mushrooms can be used for a gourmet twist.
  • Vegan Option: Replace butter with olive oil and cream with coconut cream or a plant-based alternative.
  • Blending Tip: Avoid overfilling your blender with hot soup. Work in small batches for safety and smoothness.
  • Storage: Refrigerate leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
