Description

Monterey Chicken Spaghetti is a delicious comfort meal that combines tender chicken, creamy sauce, and cheesy goodness with spaghetti.


Ingredients

  • 2 cups cooked spaghetti
  • 1 pound boneless, skinless chicken breasts, cubed
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup shredded Monterey Jack cheese
  • ½ cup sour cream
  • ¼ cup chopped green onions
  • ¼ cup sliced black olives (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the cubed chicken and season with garlic powder, onion powder, paprika, salt, and black pepper. Cook until the chicken is no longer pink, about 5-7 minutes.
  3. In a large mixing bowl, combine the cooked spaghetti, cooked chicken, diced tomatoes, sour cream, and half of the Monterey Jack cheese. Mix well until everything is evenly coated.
  4. Transfer the mixture to a greased 9×13 inch baking dish. Spread it out evenly and top with the remaining Monterey Jack cheese.
  5. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and let it cool for a few minutes. Garnish with chopped green onions and black olives if desired before serving.

Notes

  • For a spicier version, add diced jalapeños or a teaspoon of cayenne pepper to the chicken mixture.
  • Substitute the Monterey Jack cheese with cheddar cheese for a sharper flavor or use a blend of cheeses for added richness.
