Ingredients

Scale

Ground Beef Taco Filling:

  • 1 lb. ground beef (80-90% lean)
  • 1 tablespoon vegetable oil
  • ½ cup onion (finely chopped)
  • 1 tablespoon chili powder
  • ½ teaspoon garlic powder
  • 1 teaspoon ground cumin
  • ¼ teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon of salt and pepper (or adjust according to your preference.)

Taco Toppings:

  • 1 cup of grated cheese (such as cheddar, Monterey Jack, or your preferred variety.)
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup corn salsa
  • 1 cup pico de gallo
  • 3 avocados (diced)
  • ½ cup sour cream
  • 1 bunch chopped cilantro
  • Lime wedges (for garnish)

Taco Shells:

  • 10 large tortillas (flour or corn, cut into small rounds or used as mini tortillas)

Instructions

Prepare the Ground Beef Taco Filling:

  1. Heat the oil: In a spacious skillet, warm the vegetable oil over medium heat.
  2. Cook the onions and ground beef: Add the finely chopped onion and sauté for 2-3 minutes until softened. Incorporate the ground beef, using a spoon to break it apart as it cooks, and continue until it is browned and thoroughly cooked, which should take around 7 to 8 minutes.
  3. Season the beef: Stir in the chili powder, garlic powder, ground cumin, dried oregano, paprika, salt, and pepper. Cook for another 2-3 minutes, stirring to ensure the spices are evenly distributed and fragrant.
  4. Simmer and finish: Once the ground beef is fully cooked and seasoned, remove the skillet from heat and set it aside while preparing the taco shells and toppings.

Prepare the Tacos:

  1. Warm the tortillas: If using large tortillas, cut them into smaller rounds (about 3-4 inches in diameter). Warm the tortillas in a skillet or in the oven to soften them.
  2. Assemble the mini tacos: Place a spoonful of the seasoned ground beef filling onto each mini tortilla. Top with your choice of shredded cheese, diced tomatoes, shredded lettuce, corn salsa, pico de gallo, diced avocados, and a dollop of sour cream.
  3. Garnish and serve: Garnish the tacos with freshly chopped cilantro and a squeeze of lime juice. Serve them warm with extra lime wedges on the side for an added citrus kick.

Notes

  • Storage Tips: Store leftover components separately in airtight containers in the fridge for up to 3 days.
