  • 1 1/2 cups milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup cream cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • Salt and pepper, to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Season the Chicken:
    • Rub chicken breasts with olive oil, taco seasoning, cumin, chili powder, salt, and pepper.
  2. Cook the Chicken:
    • Heat a skillet over medium heat. Add seasoned chicken and cook for 6-7 minutes per side until golden brown and cooked through (internal temperature of 165°F/74°C).
    • Squeeze lime juice over the chicken during the last minute of cooking. Remove chicken and set aside, covering to keep warm.
  3. Make the Cheese Sauce:
    • In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes to form a roux.
    • Gradually add milk, whisking constantly to avoid lumps. Simmer for 5 minutes until slightly thickened.
    • Lower heat and stir in shredded cheddar, cream cheese, garlic powder, paprika, salt, and pepper. Stir until the cheese melts and the sauce is smooth.
  4. Assemble and Serve:
    • Place cooked chicken breasts on a serving plate. Generously pour cheese sauce over each piece.
    • Garnish with fresh cilantro if desired.
