Description

This Mexican Caesar Dressing (Chopt Copycat) is a creamy, smoky, and slightly spicy dressing that takes any salad to the next level. Made with Greek yogurt, chipotle peppers, olive oil, and lemon juice, it’s packed with bold flavors and a rich, velvety texture. Perfect for drizzling over salads, tacos, or even using as a dip, this homemade version is quick, easy, and healthier than store-bought dressings!


Ingredients

  • ½ cup plain Greek yogurt (5% milk fat recommended)
  • 2 chipotle peppers in adobo sauce
  • 2 tablespoons olive oil
  • 2 tablespoons mayonnaise
  • Juice of 1 lemon
  • 3 garlic cloves, chopped
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Blend the Ingredients
    • In a blender or food processor, combine Greek yogurt, chipotle peppers, olive oil, mayonnaise, lemon juice, garlic, Dijon mustard, honey, salt, and pepper.
  2. Blend Until Smooth
    • Blend on high speed until the mixture is smooth and creamy.
  3. Adjust the Consistency
    • If the dressing is too thick, add 1–2 tablespoons of water or additional lemon juice and blend again.
  4. Taste & Adjust
    • Adjust seasoning by adding more salt, honey, or lemon juice if needed.
  5. Chill & Serve
    • Transfer to an airtight container and refrigerate for at least 30 minutes before serving.

Notes

  • For extra spice, add an additional chipotle pepper or a dash of hot sauce.
  • Store in the fridge for up to 5 days in an airtight container.
  • Use fresh lemon juice for the best flavor—bottled juice won’t have the same brightness.
  • If using regular yogurt, the dressing will be thinner. Reduce the olive oil slightly for a thicker consistency.
