Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly spray with olive oil.
  2. Sauté the spinach: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped spinach and cook for about 2 minutes, until wilted. Remove from heat and let cool.
  3. Mix the ingredients: In a bowl, combine feta cheese, Parmesan, almond flour (or all-purpose flour), beaten egg, oregano, garlic powder, salt, and black pepper. Stir in the cooled spinach and mix well.
  4. Form the crisps: Scoop 1-2 tablespoons of the mixture and shape into small, flat rounds. Place them evenly on the baking sheet, leaving space between each.
  5. Bake: Bake for 12-15 minutes, flipping halfway, until golden brown and crispy.
  6. Cool and serve: Let the crisps rest for 5 minutes. Garnish with fresh parsley and extra feta if desired. Serve warm.
